Another recipe for homemade pancake - credits to Paula Deen!!! :)

Ingredients :
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon sugar
Pinch salt
2 eggs
2 cups milk
1 tablespoon vegetable oil, for griddle

Method :
Heat a nonstick griddle over medium heat while you prepare the pancake batter.

Combine the flour, baking powder, baking soda, sugar, and salt in medium bowl. Whisk eggs and milk together in another bowl until combined.

Whisk the dry ingredients to the wet ingredients and gently mix until incorporated.

Add the oil to the hot griddle and spread evenly to coat the bottom of the pan. Ladle about 1/3 cup of batter to the pan and cook the pancake for about 2 minutes. Flip the pancake and cook until brown on the other side, roughly 1 to 2 minutes longer. Transfer pancake to a plate. Repeat with remaining batter and set pancakes aside for assembly.

  2. In a large bowl, beat butter and sugar. Add in eggs yolk beat till fluffy. Add in condense milk. Mix well. Then, add in vanilla essence.
  3.  In a separate bowl, beat egg white till fluffy.
  4. And then, mix #2 and #3 together in a mixer bowl. Mix them well.
  5. In a separate bowl, put in  the prunes and black currents together. Then put a little bit of flour. Mix them well.
  6. Add the sifted flour into the batter ( #4 ) - add flour first, then the fruits, and the flour, then the fruits.. The rule is : put the flour at first, and end it with the flour too. Mix it well.
  7. Bake for 1 hour 10 mins in 170c. Test with stick if it is cooked or not. Do not forget to preheat your oven.
  8. If you planned to making cupcakes, bake at 180c for 15 minutes  then turn to 170c for 10 minutes.
* there's a huge difference between ready-mixfuits in a box and handmade mixfruits..
