  • 10 oz plain flour
  • 2 tsp double action baking powder
  • 3 oz brown sugar
  • 3 oz castor sugar
  • 2 tbsp condense milk (susu cap junjung)
  • 10 oz prunes (better use sunsweet - seedless) - slice into thin pieces
  • 3 oz black current - slice into thin pieces
  • 1 tsp vanilla essence
  • 6 eggs grade A - separate eggs white and yolks.
Method :
  1. Sift flour with double action baking powder 2 times - set aside.
  2. In a large bowl, beat butter and sugar. Add in eggs yolk beat till fluffy. Add in condense milk. Mix well. Then, add in vanilla essence.
  3.  In a separate bowl, beat egg white till fluffy.
  4. And then, mix #2 and #3 together in a mixer bowl. Mix them well.
  5. In a separate bowl, put in  the prunes and black currents together. Then put a little bit of flour. Mix them well.
  6. Add the sifted flour into the batter ( #4 ) - add flour first, then the fruits, and the flour, then the fruits.. The rule is : put the flour at first, and end it with the flour too. Mix it well.
  7. Bake for 1 hour 10 mins in 170c. Test with stick if it is cooked or not. Do not forget to preheat your oven.
  8. If you planned to making cupcakes, bake at 180c for 15 minutes  then turn to 170c for 10 minutes.
* there's a huge difference between ready-mixfuits in a box and handmade mixfruits..
